If I'm being honest, I've never made tiramisu. It just feels slightly daunting that requires effort, planning, and at least one Italian grandmother 🙂
This recipe is not the tiramisu that you spend hours on in the kitchen. But it's really (really) good. And has a lot of similar components to a tiramisu. So, it definitely lives in the same flavor world and absolutely scratches the itch.
Lately, there’s been a wave of recipes that reinterpret classic desserts instead of perfectly recreating them, like the viral Japanese cheesecake that took the internet by storm in early 2026. And people just ate it up (literally). Recipes like these have the same soft sweetness, same comforting feeling, just lighter, simpler, and easy to whip up at home. The result feels familiar enough to satisfy a dessert craving, but simple enough to make on a Tuesday night without turning it into a project. A functional middle ground we love.
Ingredients
- 1 cup of plain plant-based yogurt
- 1 espresso shot (I made mine with instant espresso powder)
- 1 tsp vanilla
- Rooted Living Sunbutter granola
- 1 tsp cacao powder
DIRECTIONS
STEP 1
Make your espresso shot. Add it to a small bowl with your yogurt and vanilla. Mix well.
STEP 2
Layer the Sunbutter granola with the yogurt mix. Top with a dusting of cacao powder!
