Banana "Nice Cream" (With Hidden Veggies)

Some recipes feel almost too simple to count. This is one of them. Frozen bananas, blended until soft and creamy, turn into something that quietly feels like dessert and breakfast at the same time. The kind of thing you make once and then never go back.

There’s also a small secret in this version... something you wouldn’t notice unless someone told you. It doesn’t change the flavor at all, but you sneak in multiple servings of veggies to make this meal extra full of fiber, nutrients and nourishment. The best kind of upgrade: invisible, but doing a lot behind the scenes.

Finished with a handful of Rooted Living granola for texture, it becomes the sort of bowl that feels put together without trying too hard. Sweet, cold, simple, and surprisingly grounding. Proof that sometimes the easiest recipes are the ones you come back to the most.

Ingredients


  • 1/2 cup Peanut Butter Crunch granola
  • 2 frozen bananas
  • 1/2 cup frozen cauliflower
  • 1/2-1 cup soy milk
  • 1 tsp vanilla
  • Optional add-ins: (protein powder, coconut water, chocolate chips, nuts, etc).

DIRECTIONS


STEP 1

Throw everything into a food processor or high speed blender. Blend on high until completely smooth! This may take a few minutes!


STEP 2

Add your choice of Rooted Living granola on top (we love Peanut Butter Crunch).
